I have never been especially crazy about tuna salad, until I found this fantastic tuna caught locally off the central coast of California.  If you can find good quality tuna, it makes all the difference in your wraps, or sandwiches.

My new favorite is Capriccio!  This is by far the best tuna I have ever had in a can.

Diane and Wayne Moody, fishing from their boat, Capriccio, out of Morro Bay, California, catch albacore tuna using sustainable hook-and-line methods. Then they hand-pack and cook the fish only once (the industry standard is twice), meaning their tuna tastes far fresher than the other stuff you find in the grocery store. When you open it, you will not see flakes of fish, or what looks like cat food.  This is one beautiful piece of fresh albacore in its own Omega 3 rich fish oil.  You don’t want to drain the oil, but mix it in with the albacore for the greatest health benefit.  I love the smoked variety.  They add a touch of olive oil and seasonings.  If you don’t live on the central coast, you can purchase it online. I am not a vegan, but I do enjoy this Veganaise made with grapeseed oil.  This is a healthy alternative to the ones made with canola or soybean oil.

Try this low carb healthy Elevated Tuna Salad!

Tuna Salad Lettuce Wrap

1 can of Capriccio Smoked, do not drain

2-3 T Veganaise, or good quality mayonnaise

1 stalk celery chopped

¼ cup shelled sunflower seeds

1 T Dijon or course ground mustard

S& P to taste

2 large pieces of butter lettuce or iceberg

Optional extras: shredded carrots, raisins, dried cranberries, red onion, pickles, or chopped walnuts.  Get creative!

Mix ingredients and place in lettuce bowl. This will make two large wraps.
